I love cold soups, especially on a hot day, and this Yogurt and Vegetable cold soup is refreshing as well as nutritious. It’s a version of Tarator soup which is popular in the Balkans. Use your favorite brand of plain yogurt made from cow, sheep, or goat milk. I prefer Greek-style because it’s extra creamy.

Balkan Tarator soup
Tarator soup, which originated in Bulgaria is similar to Middle Eastern or Greek tzatziki but made as a soup rather than a dip. It’s generally made with Bulgarian yogurt, cucumbers, garlic, chopped dill, sunflower oil, walnuts, and a bit of water or ice. The version above has added tomato juice, peppers, scallions, and mushrooms to give it a twist in flavor.
Yogurt is an excellent source of probiotics
The lactobacillus acidophilus, contained in yogurt is a beneficial bacteria that will help to improve your digestion, help prevent stomach ailments, and even help with respiratory infections. Probiotics help to control the flora and fauna in your body and keep it in balance. This yogurt soup recipe also contains tomato, vegetables, and is flavored with dill, garlic, and honey giving you powerful anti-oxidants and immune system protection.
