If I were stranded on a desert island, I would want to be near an avocado tree. I could absolutely live on avocados and guacamole. Avocados have numerous health benefits and are extraordinary for skin and hair.
Now . . . There is guacamole and then there is KILLER guacamole. This recipe is in the KILLER category because it adds some festive Caribbean fruits and tasty spices that will send you straight to heaven!
To make the best guacamole, you want to make sure you find the tastiest avocados. Living in California, Hass avocados are plentiful and, to me have the richest and most buttery taste in the entire avocado world. Hass avocados are also grown in Chile. In Chile, they are grown on hillsides and because of the mountains and other environmental conditions are protected from pests.
I found a small mango called Champagne Mango at the grocery store. I don’t know about you, but if something has the words “champagne” attached to it, I’m there. The mango adds a zingy taste to the guacamole that really sets it apart. If you can’t find a mango try papaya instead. I had some smoked sea salt merken (made in Chile) that I added to the mix instead of regular sea salt. It’s 100% natural. Merken is a native condiment made out of chili pepper. There are so many interesting sea salt combos these days.
The guacamole can be served with vegetables or chips, but I chose to use chips made with vegetables. The chips shown in the picture are made of Spinach and garlic, red beet and onion and carrot and tomato. They are all natural and gluten free with stone ground white corn, black sesame seeds, chia seeds and natural spices by RW Garcia.
- 2 avocados peeled and cut into chunks
- 1 mango peeled and cut into chunks
- 1 tomato cored and cut into chunks
- 2 scallions diced
- 3 garlic cloves, minced
- ¼ tsp habanero pepper
- 3 Tbsp of fresh cilantro
- ¼ cup of lime juice
- 1 tbsp ground cumin
- 1 tsp Tabasco sauce
- salt and pepper to taste
- In a food processor, blend all the ingredients, stopping just before the mixture is completely smooth. Serve with chips or vegetables.
